Bistro 57 has now opened in Lucknow | Interview with Amritansh Chaturvedi
Amritansh Chaturvedi is currently doing his Master’s in Business Management from Mumbai. During the lockdown period he found an opportunity to open Bistro in Lucknow and he put in his efforts as well as his entire savings to make Bistro happen. Amritansh was also the president of a vegetarian food fest called “Grubhub” that was conducted in Lucknow. Bistro 57 recently opened at the Phoenix Palassio mall, Lucknow and this outlet is owned and managed by Amritansh.
Tell us about Bistro
Bistro was once a small outlet in Delhi which I and my friends used to visit a lot and then its owner, Mr. Ankit started to promote it and approached the youngsters for business. Soon many such outlets opened all across Delhi and now it has reached Lucknow.
So Bistro is 90% takeaway outlets and 10% of it consists of seating outlets. Gwalior is the first one of those seating outlets and Lucknow is the second one. Bistro is known for its Italian food with an Indian touch like Pizza, Pasta, Sandwiches, Nachos cheese and corn.
Bestsellers: Cold coffee Hazelnut and Kit Kat Shake, Nachos cheese and corn, Paneer Makhni Sandwhich and Exotic Pizza.
One of the main struggles was that there was a lack in funds and also the mall was closed during the lockdown as well, so there was a lot of uncertainty. During Lockdown, we had to pay the staff their salaries and many of them left. Uncertainty was the greatest struggle.
We dealt with that by giving it time and putting more funds into it.
What’s the USP of Bistro 57?
In food, Nachos cheese and corn is our specialty, also the quality of food is top notch in very affordable prices, as a matter of fact our prices are considered to be very low in comparison to the mall but the product quality is always the best.
Another USP is personalized experience, I make sure to visit my guests and talk to them. I meet them and make them feel comfortable and relaxed. Our hospitality and service is our USP as well. Our store is not located in the food court so it has a private ambience.
I am lucky in that matter as I had a good guiding force with me. Mr. Siddhart and Mr. Ankit are the main partners and I joined them after Mr. Ankit approached me. I was also supported by my parents that inspired me to do something. I put all my mental, physical and economical power into it.
What are you planning to introduce to the café?
I am looking forward to introduce more Italian dishes like Ratatouille, salad, wraps, waffles and more. I am also looking forward to increase the staff. We have a good quality so we want to invest more in that. I also take suggestions from our customers so that we can keep improving.
Tell us about the service and food
We have three chefs, our main chef Deepak has worked for more than 6 years with Bistro and the other two chefs, Prem and Anwil have worked with us for three years now. Our dishes are made without the use of gas, we use induction and electrical appliances, for pizza we use stone oven. These chefs are experts at what they do, and also we have invested a lot on quality. If someone wants some custom changes we allow that and we make sure the customers are satisfied. We make sure we keep up with the customer’s expectations.
In times of covid we make sure to sanitize the entire space in every one and two hours, our staff wears masks, caps and gloves at all times, temperature check is a must. The customers also sanitize their hands before entering the café.
What message do you have for our readers?
I want the readers to know that whenever a new brand opens in Lucknow, it is because we want Lucknow to grow more commercially. We want to give the people of Lucknow a new and better experience. I want people to appreciate and support these brands as it will benefit both ways.
